You’ll discover that birria, that reliable staple of traditional Mexican cuisine, has gotten a makeover and is now a rising star in the world of instagrammable food.
How Birria Tacos Conquered the Internet
As you may remember from a previous post, birria is a typical dish from Jalisco, a state in west-central Mexico.
The original birria recipe basically consists of braised goat meat served in a delicious broth made with multiple spices and different types of chili peppers.
While the main ingredient of Jalisco-style birria is goat meat, the recipe began to change with the expansion to other states.
The pace of these changes began to accelerate about ten years ago. In fact, around 2010 Tijuana-style birria (made with beef instead of goat meat) became a sensation in Los Angeles and then in New York.
Birria 2.0 is made with beef and served in tacos that may also include melted cheese, a variation that people from Tijuana call “quesabirria”, a combination of quesadillas and birria.
Another innovation is that people have taken to dunking their birria tacos in broth. On one hand, this ensures that every bite of the taco is spicy and juicy. But it also offers the visual punch necessary to make a successful Instagram or TikTok post.
